This recipe takes a bit of love and attention but the crunchy, wholesome result is very much worth it. Buy the buckwheat and nuts in bulk online (for example at bionoot.nl) to significantly reduce the cost. We make a batch every weekend so we have breakfast for the whole week.

Crunchy buckwheat granola

2 weeks worth of granola for 1 person
1,5 hours

Ingredients

2 apples
2 tbsp coconut oil
3 tbsp maple syrup
1 tbsp Vietnamese cinnamon, ground
¼ tsp salt
The peel of ½ - 1 orange (to taste), zested
Some vanilla or vanilla extract if you have it available
450g buckwheat 
30g sesame seeds
80g sunflower seeds
75g almonds, chopped
* Deluxe version: add some chopped pecan nuts instead of almonds and replace part of the maple syrup by stem-ginger and syrup (and add a little extra ;). 

Instructions

  1. Heat the oven to 175 °C
  2. Peel the apples and grate them. If you have bits left (to protect your fingers from the grater), thinly slice them. Wash and zest the orange.
  3. Heat a small saucepan to medium heat, add the coconut oil, maple syrup, and the grated apple (not the sliced parts) and mix well. Add the cinnamon, salt, and vanilla (if using). Let it slowly cook for 5-10 minutes. 
  4. Put the buckwheat, the sesame seeds and - if applicable - the apple slices, in a big bowl and add ¾ of the cooked apple mixture. Mix well and spread it evenly over a baking tray. Cook for 20 minutes in the heated oven. 
  5. Meanwhile chop the almonds and put them in the bowl in which you mixed the buckwheat and apple mixture. Add the sunflower seeds. Add the remainder of the apple mixture and mix. 
  6. Once the buckwheat has been in the oven for 20 minutes, take it out and combine it with the nuts and seeds. Mix gently.
  7. Put everything back on the baking tray and bake for another 10-20 minutes until dark golden. Depending on your oven, you might need to take it out halfway to redistribute everything on the tray. 
  8. Let cool completely before storing in a container or jar.
